Ingredients

  • 15nos Mandarin oranges halved and juiced
  • 50g pepper or spearmint leaves sliced thinly
  • 3 sheets gelatine
  • Sugar, to taste
  • 100ml water
  • 6pcs ice cubes

Methods

Step 1.

In a bowl soften gelatine sheets with ice and water. Squeeze excess water and set sheets aside. * Chef’s tip: Use ice and water to soften the gelatine as water alone will cause the jelly to be too soft or even dissolve it.

Step 2.

Add sugar into orange juice if needed.

Step 3.

Take about 50ml of orange to heat up slightly in a pot (not to boil).

Step 4.

Add in softened gelatine and mix well.

Step 5.

Pour melted gelatine mixture into remaining orange mixture. Add mint leaves.

Step 6.

Set in containers and cool in freezer till mixture sets before serving. Do not freeze the mixture.
